Classic Blue Point Oysters Rockefeller

Ingredients:
  • 12 Blue Point oysters
  • 1/2 cup spinach, finely chopped
  • 2 tbsp shallots, minced
  • 1/4 cup unsalted butter
  • 1/4 cup breadcrumbs
  • 2 tbsp Parmesan cheese, grated
  • 1 tbsp Pernod or other anise-flavored liqueur (optional)
  • Salt and pepper to taste
Instructions:
  1. Preheat the oven to 450°F (230°C).
  2. In a skillet, melt the butter and sauté shallots and spinach until wilted.
  3. Add breadcrumbs and Parmesan, stirring well. Season with salt, pepper, and Pernod if using.
  4. Shuck the oysters and place them on a baking sheet.
  5. Top each oyster with the spinach mixture.
  6. Bake for 8-10 minutes until the topping is golden and bubbling.
  7. Serve hot
