Ingredients:
- 12 Blue Point oysters
- 1/2 cup spinach, finely chopped
- 2 tbsp shallots, minced
- 1/4 cup unsalted butter
- 1/4 cup breadcrumbs
- 2 tbsp Parmesan cheese, grated
- 1 tbsp Pernod or other anise-flavored liqueur (optional)
- Salt and pepper to taste

Instructions:
- Preheat the oven to 450°F (230°C).
- In a skillet, melt the butter and sauté shallots and spinach until wilted.
- Add breadcrumbs and Parmesan, stirring well. Season with salt, pepper, and Pernod if using.
- Shuck the oysters and place them on a baking sheet.
- Top each oyster with the spinach mixture.
- Bake for 8-10 minutes until the topping is golden and bubbling.
- Serve hot
